About us
The Imbibers began with a simple love of good food, good drink, and the people who bring them to life. After years of hospitality experience and a deep appreciation for wine, spirits, and everything in between, the idea of a space that didn't have to choose between tea house and bar started to take shape, somewhere you could drop in for a proper cup in the morning and stay for a proper pour by evening. We opened our doors on the 1st of May, 2026, as a family-run business, and haven't looked back since.
Our space is a tiny sandstone building on High Street, Oatlands, dating back to the 1870s, when it served as the town's dispensary. Nearly 150 years on, it's still a place people come to for what ails them, though back then a "remedy" often meant a tonic of spirits anyway, so perhaps not all that much has changed. It's part of one of Australia's largest collections of Georgian sandstone architecture, and stepping inside feels like it: cosy, unhurried, and full of character.
The Imbibers is genuinely both things at once a tea house and a wine and spirit bar, sharing the same warm room, so whether you're after a pot of something soothing or a well-made cocktail, you're always in the right place.
Everything we stock is Tasmanian, and that's a point of pride, not just a policy. Our coffee comes from Cheeky Devil, our tea from Art of Tea, and our spirits shelf features local names like Belgrove Distillery and 7K, alongside other small-batch producers from across the state. Our wine list is Tasmanian through and through, and includes a few gems you'd usually only find at the cellar door, Every Man and His Dog and Puddleduck among them. Where we can, our food follows the same rule Tasmanian-grown, seasonally driven, and built around whatever's fresh and good at the time. Nothing goes on our shelf or our menu that we haven't tried and loved ourselves; if we wouldn't pour it for a friend, we won't pour it for you.
We'd love for you to come in, take a seat, and let us show you what Tasmania does best. If you're not sure where to start, just ask that's what we're here for.
